Ingredients
- One turkey tenderloin
- One bay leaf
- One shallot
- Sprigs of fresh thyme
- A few green salad leaves
- One half of a ripe avocado
- Red pepper or ground black pepper
- Olive oil
- Just a little vinegar (optional)
- Fleur de sel
Proceedings
Heat water in a pot, add bay leaf, shallot and a little salt. When it boils, add the meat and let it boil about 5 minutes.
Run it under cold water or let it cool. Fillet it and place it in a bowl.
Mash the avocado in the bowl with a fork and add the rest of the ingredients. Do not wait too long to serve.
