Coarsely grate the zucchini.
Cut the peppers finely with a mandoline.
Heat a tablespoon of olive oil in a wok or frying pan. Place the whole clove of garlic in.
As soon as you smell the garlic, add the vegetables. Brown on high heat for 2 to 3 minutes. The vegetables should remain crispy. Then add the chili, salt, pepper and fresh cilantro.
Serve immediately. If you want to enjoy at room temperature, wait until the last moment to add the cilantro.
