Ingredients
- 2 slices of eggplant 3 inches thick
- Olive oil
- Peel of half a lemon
- Fior di sale
- Ground pepper
- Fresh herbs to taste
Proceedings
Using a kitchen brush, lightly brush the eggplant slices with olive oil. Grill the eggplant on a grill pan over medium heat.
When the flesh is very tender, grate the zest of half a lemon over it, add salt, ground pepper and finely chopped fresh herbs (basil, thyme, cilantro, mint, etc.) of your choice.
