Ingredients
- 3 leeks (white part)
- 1 red bell bell pepper
- 7-10 coriander seeds
- 2 cardamom pods
- Olive oil
- Fleur de sel
- Ground pepper
Proceedings
Peel the bell bell pepper as best you can with a peeler and cut it into long slices.
Boil it together with the coriander seeds and crushed pods adding just a little salt. Let it boil about 15 minutes then drain keeping some of the water from this cooking and the seeds.
Wash and cut off the white end of the leeks (make broth with the green part and other vegetables such as zucchini, onion, celery and why not a piece of chicken or meat).
Heat olive oil in a frying pan and add the leeks. Season with salt and after 3-4 minutes, to moisten the leeks, add some of the cooking water from the peppers. Let cook about 10 minutes, add the seeds.
Serve hot or at room temperature. At the last, add a little olive oil and ground pepper.
