Cooking Tips by Sinomedica - Thai-style chicken broth

Ingredients


Ingredients can be found in Asian groceries

  • Two chicken breasts
  • One zucchini
  • One branch of celery
  • One small onion cut into 4
  • One garlic clove cut into 2
  • One 2.5-cm piece of ginger cut into slices
  • One 2.5-cm piece of galangal cut into slices
  • 2 lemongrass sticks cut into 4
  • 10 leaves of kafir lime
  • 1/2 red chili pepper
  • Salt
  • Thai basil leaves
  • A few drops of lime
  • 1 liter of water

Proceedings

Grill the chicken breasts and cut them into 5 pieces each.

Put them in a pot with all ingredients except the basil and lime. Bring to a boil then cover and simmer on low heat for 10 to 15 minutes until a fragrant broth is obtained.

Strain the broth and keep aside the vegetables and chicken, some ginger and lemongrass. Add basil leaves and lime before serving.

You can make meatballs with the ingredients set aside!
