- Ruchetta

Choose the meat carefully, it must be excellent!
Lay half of the ruchetta on the plate. Arrange the cut slices of carpaccio upward and top them with the remaining amount of ruchetta.
Pour in a drizzle of olive oil, salt crystals or salt fjord and freshly ground pepper. You can add a few capers if desired.
