Heat the oven to 180 degrees.
Place the fish on a baking sheet covered with baking paper. Place a handful of coarse salt under and on top of the fish. Bake for about 15 to 20.
Gently remove the skin from the fish so as not to risk putting scales in the dish.
Make a cream with the peppers by putting them in a blender with olive oil and water.
Salt and pepper the fish, add olive oil and serve with fresh cilantro.
